Creamy Roasted Tomato & Garlic Pasta

There are pasta recipes you make once, and then there are pasta recipes that immediately enter the weekly rotation. This is the second kind.

Creamy roasted tomato and garlic pasta is everything we want in a comfort meal: jammy roasted tomatoes, caramelized garlic, a silky cream sauce, plenty of Parmesan, and pasta coated in every last bit of it. It tastes like something you’d order at a tiny Italian restaurant, but the actual effort involved? Surprisingly low.

The secret is letting the oven do most of the work. Roasting the tomatoes concentrates their sweetness while whole garlic cloves turn soft, buttery, and almost spreadable. Blend everything together with cream and Parmesan and you get the kind of sauce you’ll want to eat straight from the pan.

Why Roasting the Tomatoes Changes Everything

 

You could make a quick tomato cream sauce on the stovetop, but roasting is what makes this one so good.

High heat causes cherry tomatoes to blister, burst, and become intensely sweet. At the same time, garlic loses its sharpness and becomes mellow and almost caramel-like.

Add olive oil, herbs, a little heat, and Parmesan, and suddenly a handful of basic ingredients taste ridiculously luxurious.

What You’ll Need

 

For the roasted tomato sauce:

2 pints cherry or grape tomatoes
8–10 garlic cloves, peeled
3 tablespoons extra-virgin olive oil
1 teaspoon Italian seasoning
½ teaspoon red pepper flakes, or less if you don’t like spice
1 teaspoon kosher salt
½ teaspoon freshly cracked black pepper
½ cup heavy cream
¾ cup freshly grated Parmesan cheese
½ cup fresh basil leaves

 

For the pasta:

12 oz rigatoni, penne, fusilli, or pasta of choice
½–1 cup reserved pasta water
Extra Parmesan for serving
Fresh basil for serving
Freshly cracked black pepper

 

The Relatable Tip: Rigatoni is so good here. The sauce gets inside the pasta tubes, making basically every bite perfect.

 

Step 1: Roast Until Everything Gets Jammy

Preheat your oven to 425°F.

Add the tomatoes and peeled garlic cloves to a baking dish. Drizzle generously with olive oil, then season with Italian seasoning, red pepper flakes, salt, and black pepper.

Toss everything together until the tomatoes and garlic are completely coated.

Roast for 30–35 minutes, or until the tomatoes have burst and started caramelizing around the edges. The garlic should be golden and soft enough to mash with a fork.

And yes, your kitchen is about to smell incredible.

 

Step 2: Cook the Pasta

While the tomatoes roast, bring a large pot of generously salted water to a boil.

Cook your pasta until just al dente according to the package directions.

Before draining, scoop out at least 1 cup of pasta water. Don’t skip this part. That starchy water is essentially your secret ingredient for getting a restaurant-style sauce that actually clings to the pasta.

Drain the pasta and set aside.

 

Step 3: Make It Creamy

Once the tomatoes are roasted, carefully transfer the tomatoes, garlic, and all those flavorful juices from the baking dish into a blender.

Add the heavy cream, Parmesan, and fresh basil.

Blend until smooth and creamy.

Want a more rustic sauce? Instead of fully blending it, pulse a few times so you still have little pieces of roasted tomato throughout.

Taste and adjust the salt, pepper, or red pepper flakes as needed.

 

Step 4: Bring Everything Together

Pour the roasted tomato sauce into a large skillet over medium-low heat.

Add the cooked pasta and toss until every piece is coated.

Now slowly add a splash of reserved pasta water, start with about ¼ cup, and continue tossing. Add more as needed until the sauce becomes glossy, silky, and perfectly creamy.

Finish with another handful of Parmesan.

This is also where you need to resist eating half of it directly out of the skillet.

 

The Finishing Touch

Divide the pasta between bowls and top with:

Freshly grated Parmesan. Torn basil. Cracked black pepper. Maybe a tiny drizzle of good olive oil.

If you like a little heat, add another sprinkle of red pepper flakes.

Serve it immediately while the sauce is still ridiculously creamy.

This pasta is perfect on its own, but it’s also an easy base for adding protein. Try it with grilled chicken, crispy chicken cutlets, Italian chicken sausage, steak bites, or even burrata on top.

For a higher-protein version, use protein pasta and add sliced grilled chicken. You still get the creamy comfort-food moment, just with a little more staying power.

 

The Leftovers Might Be Even Better

Store leftovers in an airtight container in the refrigerator for up to 3–4 days.

When reheating, add a small splash of milk, cream, or water before warming it on the stovetop. It’ll loosen the sauce and bring back some of that fresh-from-the-pan creaminess.
